No matter how busy my days get, I enjoy cooking with wholesome ingredients and spending time with people. It's  a chance to communicate, celebrate, resolve, strategize or just enjoy the day and family and friends. Enjoying a great meal is one of the simple pleasures in my life. &lt;br /&gt;&lt;br /&gt;I don't use cook books or get to watch a lot of cooking shows but I do like to pick up new cooking ideas to incorporate into my recipes. One of my favorite websites is &lt;strong&gt;www.feastsandfotos.wordpress.com&lt;/strong&gt;. The recipes are simple and easy and very descriptive. And the photography is &lt;strong&gt;extraordinary&lt;/strong&gt;! It really makes you want to try the dish of the day!&lt;br /&gt;&lt;br /&gt;I am a big fan of fish so start with this one: &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Baked Fish with Roasted Potatoes and Fennel&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;3 cups (1 pound) red potatoes, cut into 1/8 inch slices&lt;br /&gt;1 large fennel bulb, sliced thin&lt;br /&gt;1 tablespoon olive oil (roughly)&lt;br /&gt;1/2 teaspoon each of salt &amp; pepper&lt;br /&gt;1 teaspoon fennel seeds&lt;br /&gt;2 garlic cloves&lt;br /&gt;3/4 cup white wine&lt;br /&gt;4 tablespoons chopped fresh parsley&lt;br /&gt;1/2 tablespoon orange rind&lt;br /&gt;1 teaspoon dried oregano&lt;br /&gt;1 (28-ounce) can whole tomatoes, chopped&lt;br /&gt;4 6-ounce halibut fillets (or any other firm white fish)&lt;br /&gt;&lt;br /&gt;Preheat oven to 450 degrees.  Combine potatoes, fennel, 1/2 tablespoon olive oil, some salt &amp; pepper in a baking dish and toss gently to coat.  Bake for 30 minutes.&lt;br /&gt;&lt;br /&gt;In a skillet on the stove top, heat 1/2 teaspoon olive oil.  Add fennel seeds (or not) and garlic, saute for one minute.  Add some salt &amp; pepper, wine, 1/2 of the parsley, orange rind, oregano and tomatoes; bring to a boil.  Reduce heat and simmer for 8 minutes.&lt;br /&gt;&lt;br /&gt;Sprinkle fish fillets with some salt &amp; pepper.  Arrange fillets over the potato mixture and then spread the tomato mixture over the fillets. Coat a nice layer over them, enough so it starts spilling over into the potato/fennel mixture.  Bake at 450 for 20 minutes or until the fish flakes easily.  Sprinkle with the remainder of the parsley.  Sprinkle some salmoriglio sauce over fillets (or not).&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Salmoriglio Sauce&lt;/em&gt;&lt;br /&gt;2 tablespoons fresh lemon juice&lt;br /&gt;2 tablespoons olive oil&lt;br /&gt;1/2 teaspoon dried oregano&lt;br /&gt;1 teaspoon grated lemon rind&lt;br /&gt;2 garlic cloves, minced&lt;br /&gt;Salt &amp; pepper to taste&lt;br /&gt;Wisk all ingredients together. This information is being circulated at Walter Reed Army Medical Center as well.&lt;br /&gt;1. No plastic containers in microwave. &lt;br /&gt;2. No plastic water bottles in freezer. &lt;br /&gt;3. No plastic wrap in microwave.&lt;br /&gt;Dioxin &lt;br /&gt;Chemicals cause cancer, especially breast cancer. Dioxins are highly poisonous to the cells of our bodies.&lt;br /&gt;Don't freeze your plastic bottles with water in them as this releases dioxins from the plastic. &lt;br /&gt;Recently, Dr. Edward Fujimoto, Wellness Program Manager at Castle Hospital , was on a TV program to explain this health hazard. He talked about dioxins and how bad they are for us. He said that we should not be heating our food in the microwave using plastic containers. &lt;br /&gt;This especially applies to foods that contain fat. He said that the combination of fat, high heat , and plastics releases dioxin into the food and ultimately into the cells of the body. Instead, he recommends using glass, such as Corning Ware, Pyrex or ceramic containers for heating food. You get the same results, only without the dioxin. So such things as TV dinners, instant ramen and soups,  etc. , should be removed from the container and heated in something else. &lt;br /&gt;Paper isn't bad but you don't know what is in the paper. It's just safer to use tempered glass, Corning Ware, etc. He reminded us that a while ago some of the fast food restaurants moved away from the foam containers to paper. The dioxin problem is one of the reasons. &lt;br /&gt;Also, he pointed out that plastic wrap, such as Saran, is just as dangerous when placed over foods to be cooked in the microwave. As the food is nuked, the high heat causes poisonous toxins to actually melt out of the plastic wrap and drip into the food. And the side effects from these allergies can be painful, uncomfortable and sometimes deadly. Thankfully, there is an increased awareness of ingredients in food, cosmetics, cleaning products and medicines. &lt;br /&gt;One of my clients, Sloan Miller, launched a dinner series for people with food allergies, called Worry-Free Dinners™ .  It is a membership group for anyone who has manageable food allergies and/or food intolerances and would like to explore restaurants, chefs and foodservice organizations that will offer an exclusive allergy-friendly meal. It's difficult for those going through radiation and/or chemotherapy and for the friends and families worrying about their loved one with this illness. Support groups are helpful to share emotions, learn about new procedures and preventions and stay focused on beating this cancer.&lt;br /&gt;&lt;br /&gt;One of my clients  is a member of Women at Risk (WAR) and she does a remarkable job of helping women with breast cancer. Their (WAR) mission is "to enhance the lives of women who are at high risk for the development of breast cancer and women with breast cancer through research, education and support."  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Spporting women with breast cancer and WAR is one of my goals.
